It sounds simple, because it is! This is a go to for a quick and easy dinner, and one of our favourite meals in general. It’s fast to whip up, tastes delicious, and is healthy too. It has a protein, vegetables, and a grain so that’s pretty good in my book! All you need is (you guessed it) sausage, rice, and veggies. Check out this video to see how easy to make it really is!
This recipe is loosely a “recipe” because you can completely make it your own and we switch it up all the time. Use whatever kind of sausage you like, we prefer to use something a little spicy, and add more or less depending how meat-heavy you want it to be. This would also be a super easy recipe to make vegetarian by swapping out the sausage for an alternative protein source. I will say though that if you do that, choose something flavorful and well-seasoned because most of the flavour comes from the meat/protein source. I’ll link our favourite sausage to use below.
You can also use absolutely whatever vegetables you want. We often take advantage of meals like this to use up leftover veggies in our fridge, or we also frequently just use a bag of frozen vegetables, sometimes both! We’re starting to switch to more organic vegetables, but I’ll link what we’ve been using so far and maybe add in a similar organic option later on.
As it’s written below, the recipe makes enough for one dinner for us with a bit of leftovers, but you can easily double or even triple it to make enough for a bigger family or to ensure you have lots of leftovers. Cook time is about 30-40 minutes including the time it takes to cook the rice (I like to make it slightly al dente).
*we like to use Aidell’s Andouille sausage
*If veggies are still very frozen add a little bit of water (be careful of spatter if there’s oil in the pan when you add the water)
To reheat you can toss some into a pan to fry up with a tad bit of olive oil, or just microwave!
